If you are a stay at home parent, you likely already know you aren't allowed to get sick...ever. Somehow, you often manage to stay healthy even when surrounded by sick family members. Of course, when those rare sicknesses that affect you come around, your life doesn't really change. You still have to clean house, go on errands, and keep everyone fed. Well, one of those days finally happened around here. I was the ONLY PERSON in our family to get sick, and it lasted day after day after miserable day. I'm just now starting to feel healthy again and my little one just started sniffling and coughing. Sigh.

Blueberry Crumble Yogurt

To be honest, this recipe was actually the result of baking gone bad. I tried to make a version of these strawberry oatmeal bars, but tried to use a little less sugar, less butter, blueberries instead of strawberries, and Enjoy Life flour instead of the flours listed in the recipe. In the end, these "bars" did not stick together. They still tasted wonderful but would just crumble apart when I tried to take them out of the pan.

I love using my waffle maker to make all sorts of meals and snacks for my family. I enjoy trying out new ideas, but you can never go wrong with a traditional waffle. Well, unless you forget to spray it with cooking spray...then, you are in for a looooong night of carefully soaking, scrubbing, and scraping to get all of that burned batter out of those tiny crevices.
