Peach Muffins with Candied Bacon and Sweet Peach Drizzle

When I was brainstorming ideas for what to create with my new Enjoy Life baking mixes, I couldn't get the combination of bacon and peaches out of my mind. I knew I had to try these flavors together, and the muffin mix sounded like the perfect place to start.

To make these peach bacon muffins, I cut a peach in half, removed the pit, and cooked it in a pan on medium heat for 15-20 minutes. Then, I removed the skins and pureed the peach in a blender. I mixed most of the peach puree into the muffin batter but reserved some to put on top of the muffins after they had cooled. I topped these muffins with candied bacon. I used the recipe found here.

To be perfectly honest, this was not my favorite muffin I've ever made. I am curious to try out the bacon / peach combo again soon with muffins from scratch instead of a box mix. These muffins tasted a little chalky. Either way...learning how to make candied bacon was well worth the time!
