If you are a stay at home parent, you likely already know you aren't allowed to get sick...ever. Somehow, you often manage to stay healthy even when surrounded by sick family members. Of course, when those rare sicknesses that affect you come around, your life doesn't really change. You still have to clean house, go on errands, and keep everyone fed. Well, one of those days finally happened around here. I was the ONLY PERSON in our family to get sick, and it lasted day after day after miserable day. I'm just now starting to feel healthy again and my little one just started sniffling and coughing. Sigh.
Well, when I first started to feel a sickness on its way, I decided it would be smart to hurry up and cook something while I still felt ok. I found this recipe for chicken soup and made it my own with a few changes. I omitted the celery (just because I forgot to buy it at the store) and added some kidney beans. I used Enjoy Life flour mix in place of wheat flour. This soup was delicious, and lasted for several meals.
