To be honest, this recipe was actually the result of baking gone bad. I tried to make a version of these strawberry oatmeal bars, but tried to use a little less sugar, less butter, blueberries instead of strawberries, and Enjoy Life flour instead of the flours listed in the recipe. In the end, these "bars" did not stick together. They still tasted wonderful but would just crumble apart when I tried to take them out of the pan.
When things in the kitchen don't go the way I had planned, I try to improvise and think of a new way to use what I've made instead of pitching it in the trash. So...I layered this warm blueberry crumble mixture with plain Greek yogurt and drizzled with agave syrup for some sweetness. This was a great and flavorful snack. My little girl (age 1) was a huge fan of this crumble and she might have had more to eat than I did.
I've used the Enjoy Life flour mix in several recipes already, and I've never noticed any difference in taste between it and my usual flour. I love using products that have a great list of all natural ingredients that come from a company with a great history of being aware of the needs of those with food allergies and those living gluten free.
