Apple Cinnamon Pancakes

I LOVE making pancakes. I feel very much in my element when armed with my pancake batter, hot griddle, and squirt bottle (for all the fun shapes, of course). I usually make my pancakes from scratch, but when my Enjoy Life goodies came in the mail, I was excited to have another excuse to make (and eat) pancakes.

For these simple cinnamon apple pancakes, I prepared the batter according to the box directions. Then, I mixed in a few sprinkles of cinnamon. I thinly sliced an apple into rings and removed the core and seeds out of each ring using a cupcake corer. The pancakes that turned out the best were the ones that used the thinnest slices of apple. If the apple is too thick, the batter won't reach the griddle when you flip to the other side. I also had the most success when letting the apples cook on the griddle by themselves for a few minutes before using them in a pancake. To add an apple slice to a yummy pancake, I poured my batter on the griddle and then before flipping, carefully placed my apple slice in the middle of the partially cooked circle of batter.

When my husband saw the pictures for my post he said something along the lines of, "Isn't it funny how photographers put so much extra syrup on pancakes to make them look more impressive?" To which I nervously laughed, "Uhhh...yeah...that's totally why I used that much syrup." (Please tell me I'm not the only person who is generous with the syrup...please...even if it's a lie.) :)
